de l'Ill.The Auberge de l’Ill is quite an institution, not only within French gastronomy,but also as part of Alsatian heritage and local life. It is a wonderful family story that stretches over a century and a half, and in 2017 can pride itself on being awarded three Michelin stars for the 50th time!

Ten years after the completion of an initial overhaul of the restaurant, Jouin Manku was again called upon to revisit the interior architecture of the Auberge
de l’Ill.

The confidence and complicity that has grown up between the Haeberlin and Baumann families, Patrick Jouin and Sanjit Manku, ensured the best possible environment for the development of the project, coupled with an intimate knowledge of the site and local partners, including the executive architect and numerous craftsmen. The driving idea – in the spirit that has always overflowed
in the Haeberlin/Baumann family – was to further enrich customer experience, to make their visit even more special.

Although several individual areas were addressed, the principles for the overall project, which resulted from reflection undertaken with the entire family, were interpreted progressively, moving from one space to another in a careful succession that ensures the overall continuity.

The result is that visitors now benefit from a new layout, which from one space to the next shows itself to be full of detail and magic. Working to anchor the restaurant quietly within its environment –characterised by river, fauna and flora – the decorative repertoire put together around these elements captures not only the surrounding landscape, but also the spirit of the place and the universe of welcome, beauty and simplicity constantly upheld by the Haeberlin/Baumann family.

The project focuses predominantly on enriching impressions by means of a collection of exceptional points, like moments of magic for visitors.

To this end, the entrance area has been entirely revisited to incorporate new spaces and functions, including a salon and a boutique. Clients can relax here before or after their meal, have a drink, and even make a few little purchases.

LE PETIT SALON AND LA BOUTIQUE BAR
游客可以在精品店内的酒吧或小沙龙(Petit Salon)内小酌一杯,开始他们的美食之旅。Visitors can start their gastronomic experience with a drink at the bar in the boutique, or in the Petit Salon.

Occupying a more intimate space, the salon provides a lounge bar atmosphere with a range of comfortable, leather-upholstered seating around made-to-measure tables.

Fitted out like a kind of cabinet of curiosities, the boutique is furnished with a high table covered in stitched leather with a pewter-finish metal top. It can be used as a bar, with high stools, or as display products. The arrangement of this space maintains the spirit of the Auberge while also providing the option to decorate thematically for traditional festivities or to mark the changing seasons ... Along the two long walls, facing each other, are a dozen luminous glazed display cases of different sizes and depths, made of several different species of wood. The overall coherence of this ‘ordered accumulation’ is ensured by a large timber element resting on a thick base, which forms a sort frame on the wall. In these showcases are displayed products (books, objects, local products...) and accounts, photographs and souvenirs of Haeberlin family history and other events that have marked the history of the establishment.

Natural light from the glazed roof is filtered through a metal mashrabiya screen cut out with the restaurant logo. An area of oak floorboards inset like a rug in the centre of the stone floor adds warmth and introduces a more domestic tone.

In the reception area, the red walls, traditional Alsatian stove and picture hanging so familiar to existing clients have been kept, and complemented by a new curving desk linking the bookings desk and the cash register. Bespoke designed, its timber cladding is made up of planks cut to different widths, reminiscent of the little boats on the river outside.
餐厅THE RESTAURANT

Each dining room has been treated individually according to specific ideas, but they all pursue the same quest for conviviality, calm and refinement. A huge rug runs through the different dining areas, linking them in continuous movement. It is an extraordinary piece of work; handmade in tufted wool in the Manufacture de Bourgogne workshops, it is based on the theme of the river with its floods and fertile alluvial plain, its gentle shifts in tone – from green– blue to red ocre – suggesting the flow of water and the sedimentary contour lines.

While all the dining rooms have been refurnished with new Pedrali dining chairs designed by Patrick Jouin, the side tables designed by Laurent Janvier, along with the portrait of Paul Haeberlin by Alsatian painter Roger Muhl and the watercolours by Jean-Pierre Haeberlin that are part of the fabric of the Auberge, have been kept and enhanced by the new arrangement.
长廊THE VERANDA

The major change here is in the ceiling, with the installation of three large discs (4m in diameter) in mirror-polished stainless steel, whose surfaces have been subtly worked to suggest lapping water. These reflective ‘puddles’ reiterate and accentuate the presence of the nearby river with its changing reflections, while enlarging the space.

The walls are covered in carefully arranged panels of pale fabric to ensure the acoustic comfort of the room. The quest for perfection runs through every detail, such as the beautiful skirting boards in patinated bronze.
河畔厅THE RIVER ROOM

To ensure perfect calm for diners, access to the Salle Alsacienne dining room and
the Pigeonnier has been redesigned. The curtain of Murano glass bulrushes has evolved to lead visitors around the edge of dining areas. This new route is embellished by a fairy-tale decor and some magical moments. The wall is covered in fabric delicately embroidered with coloured butterflies.

Here and there, like little treats for visitors, slivered openings give glimpses of landscapes in oxydised copper, brought to life with butterflies and magnificent paper birds hovering, the works of artist Diana Beltran Herrera and a nod to the local tradition of paper cut-outs.
LA SALLE ALSACIENNE

Conferring a particular atmosphere on this space, while also evoking the cosy, intimate atmosphere of the traditional Alsatian winstub, a vast marquetry panel (3m x 7m) curves around to form a generous alcove for two made-to-measure tables. This panel is currently the largest surface of marquetry in the world.

Designed by graphic artist Philippe David on the theme of the river, the decor marries birds (storks, heron) and insects, including a dragonfly, with willows and water plants. This masterpiece of craftsmanship brings to mind the sculpture and engraving characteristic of Alsatian furniture, adding to it the precious nature of marquetry and pyrography, along with some areas of solid colour in gold or white. Over 20m2 it incorporates about ten different types of wood. The design integrates the technical constraints that are particular to marquetry, requiring very clearly defined shapes, which are juxtaposed to create the landscape.

The depth of field is obtained by creating a succession of layers much like a theatre set. Extending the curve of the marquetry panel, bronze reeds embedded in a timber half partition ensure the intimacy of the space without altogether enclosing it.
LE PIGEONNIER

The wonderful timber roof frame and the height of the space that make it so original have been preserved, but two long beams have now been decorated in ‘luminous bundles of twigs’. These unusual pieces are composed of bundles of glass tubes like frozen branches diffusing light. By forming an intermediary sky, they bring a scale to this dining area.
